2. In the bowl of a stand mixer, whisk together the egg whites, vanilla extract, and zero calorie sweetener.
3. In a separate bowl, whisk flour, protein powder, and baking powder. Pour into wet mixture and combine.
4. Spray 3 cake pans with cooking spray and cut a piece of parchment paper to fit the bottom of each. Pour batter evenly between the 3 pans and bake for 15 minutes.
5. Make the frosting by beating together the cream cheese and Greek yogurt, then add in powdered sweetener and vanilla extract.
6. Once the cake layers are cooled, cut the tops off each round to even out, then transfer to a cake stand. Spread less than a third of the frosting on the first layer, repeat with the second and third layer, then top with the rest of the frosting.
7. Once the cake is fully frosted, top with sprinkles. Enjoy!
