Gluten Free (without Fiber)

Ingredients

  • 1 scoop Gainful Protein
  • 1 Cinnamon Toast Flavor Boost
  • 1 scoop Gainful Collagen Performance Boost
  • 1 scoop Gainful Fiber Performance Boost (omit for gluten free)
  • 2 eggs
  • ¼ cup coconut oil (melted)
  • 1 3/4 cups plant based milk
  • 1 1/2 cups gluten free all purpose flour
  • ½ tsp baking powder
  • ½ tsp cinnamon

Directions

  1. 1. Preheat oven to 375 and prep your muffin tin using muffin liners or grease with coconut oil.
  2. 2. Whisk together all liquid ingredients (eggs, protein, plant based milk) into a large mixing bowl. Mix until a batter forms.
  3. 3. Add the dry ingredients into the same mixing bowl. Mix until a batter forms.
  4. 4. Pour batter into muffin tins. Bake for 20-25 minutes. Enjoy!
