Protein Apple Loaf Cake

Ingredients
Loaf Cake
1 cup almond flour
¾ cup flour, gluten-free or all-purpose
1 scoop of Gainful Protein + Cinnamon Flavor Boost
1 scoop of Gainful Collagen Powder
1½ tsp baking powder
½ tsp salt
2 tsp ground cinnamon
1 ½ cup packed, grated apple
½ cup melted butter, regular or vegan
3 large eggs
¾ tsp pumpkin pie spice
¼ tsp ground clove
¾ cup coconut sugar
¼ cup apple sauce
1 tsp vanilla extract
Streusel Topping
? cup old-fashioned rolled oats
? cup coconut sugar
¼ cup sliced almonds
2 tbsp flour, gluten-free or all-purpose
¾ tsp ground cinnamon
¼ tsp ground cloves
Pinch of salt
? cup cubed butter, regular or vegan
Instructions
- Preheat the oven to 325ºF. Line a loaf pan with parchment paper and set aside.
- In a medium-sized bowl, whisk together almond flour, flour, Gainful Protein powder, Cinnamon Flavor Boost, Gainful Collagen powder, baking powder, salt, ground cinnamon, pumpkin pie spice, and ground cloves.
- In a separate bowl, add grated apple, melted butter, eggs, apple sauce, and coconut sugar and mix until combined.
- Add the wet mixture to the dry ingredients and fold until combined and there are no flour streaks. Pour the batter into your prepared baking pan.
- Make the streusel topping. In a separate bowl, add the oats, coconut sugar, sliced almonds, flour, cinnamon, cloves, and salt. Stir until combined.
- With clean hands, add butter and toss until coated, breaking apart to form lima bean-sized pieces.
- Sprinkle the streusel evenly over the top of the batter.
- Bake for 1 hour to 1 hour 15 minutes or until a knife inserted into the middle comes out clean. Let cool for 20 minutes before slicing, and enjoy!
